Another food post. Cindy follows multiple sites focused on Kauai and encountered multiple suggestions to try the Pineapple In Paradise food truck, We happened across the truck in a parking lot after driving the last group of kids back to the airport. The focus is on an "ice cream" made from pineapples that was probably first popularized by Dole (Dole Whip). The local delicacy is made from white pineapples, but all variations are great. This is our first taste this trip. The uniqueness of the Pineapple in Paradise offering is its effort to save the world from plastic waste by not serving in plastic containers. They sell their product in a cone made from a brownie.
